Cooking with microgreens
Microgreens can be a versatile addition to your meals, including cooked dishes. While some microgreens should be added at the last moment, others can handle a bit of heat. For example, they can be added to stir-fry dishes or included in pasta dishes like this recipe featuring fresh veggies and pancetta.
Pasta with Pancetta, Veggies, and Pea Shoots
Ingredients:
1/2 pound of your preferred pasta, cooked (bite-sized pastas work best)
1 4-oz package of pancetta
1 cup of fresh peas
3 cups of pea shoots
3 tablespoons of freshly grated Parmesan cheese
Directions:
Heat a large, heavy-bottomed pan over medium heat.
Cook the pancetta for 3-4 minutes.
Add the peas and cook until heated through, around 2-3 minutes.
Add the pea shoots and cook for an additional minute before tossing everything with the pasta.
Garnish with freshly grated Parmesan cheese.
