Cooking with microgreens

Microgreens can be a versatile addition to your meals, including cooked dishes. While some microgreens should be added at the last moment, others can handle a bit of heat. For example, they can be added to stir-fry dishes or included in pasta dishes like this recipe featuring fresh veggies and pancetta.

Pasta with Pancetta, Veggies, and Pea Shoots

Ingredients:

  • 1/2 pound of your preferred pasta, cooked (bite-sized pastas work best)

  • 1 4-oz package of pancetta

  • 1 cup of fresh peas

  • 3 cups of pea shoots

  • 3 tablespoons of freshly grated Parmesan cheese

Directions:

  1. Heat a large, heavy-bottomed pan over medium heat.

  2. Cook the pancetta for 3-4 minutes.

  3. Add the peas and cook until heated through, around 2-3 minutes.

  4. Add the pea shoots and cook for an additional minute before tossing everything with the pasta.

  5. Garnish with freshly grated Parmesan cheese.
